    Cafe Roka
MODERN AMERICAN FOOD Chef/Owner Rod Kass has evolved a very personal style of cooking over the past 25 years. The dishes on our menu are inspired primarily by Italian, Californian, Mediterranean, and vegetarian cuisines.
THE FRESHEST SEASONAL INGREDIENTS Rod seeks out the highest quality foods, focusing on local organic produce, naturally farmed, grass-fed meats, and sustainably harvested seafood.
WINE BAR New! Featuring the best of Arizona wines. Local and regional selections offered for tasting on the weekends. A limited menu is available for a light lunch or appetizers.

Cafe Roka serves modern American food. The ‘signature’ of Chef/Owner Rod Kass’ cooking is a style rather than a particular dish or dishes (although you won’t find his Portobello Mushroom and Artichoke lasagna anywhere else). He offers many different tastes, textures, colors, and looks throughout a four course dinner. We are one of the few remaining restaurants in the United States to offer four courses (soup, salad, sorbet, and entrée), without a prix fixe menu.

Rod often uses nuts, polenta, pasta, and citrus, to create opposite palate combinations of crunchiness/softness, tangy/sweet, spicy/muted, or subtle/rousing. Plates are artfully presented, because the eye plays a large part in anticipation of taste and appreciation of food, often with bright accent sauces complementing the natural color of the food.

Soups, which vary nightly, are vegetarian based and might be, for example, black bean/smoked white corn, mushroom/potato, or tomato/green chile/cilantro.

Salads are generally a mix of organic greens. Dressings might be a roasted pine nut/white truffle oil vinaigrette, an apple/sherry vinaigrette, or a creamy basil dressing.

Sorbet, lime or lemon, is a palate cleanser and prepares the way for the entrée.

Many people are on restricted food diets. Fortunately we are able to provide interesting and good food for those who are vegan, have problems with gluten, or are on special diets. We also offer innovative and tasty vegetarian food with two or three vegetarian options on every menu.

Generally, we change our menu twice weekly. About 35 different dishes are rotated through the menu depending on the season and product availability.

Rod Kass is the chef and owner of Cafe Roka. From 1986-1989, Rod apprenticed at the Phoenix Biltmore, worked at the La Champagne Room at the former Registry Resort, and was chef at the Market Room of the 8700 Club in Scottsdale. He moved to Bisbee in 1990 and after working in a variety of food settings, opened Cafe Roka in 1992.

    Dos Cabezas Wineworks
Planted, harvested, and fermented in Arizona! Come try a glass!

Dos Cabezas WineWorks is a family-owned and operated winery that challenges the perception that Arizona does not produce exceptional wines. Dos Cabezas WineWorks has been producing wines in Arizona since 1995. The winery was originally located on the 80 acre Dos Cabezas Vineyard near Willcox, AZ. Just after the harvest of 2006, winemaker Todd Bostock purchased the winery with the help of his wife Kelly and his parents Frank and Paula. The winery was moved to Sonoita, Arizona, close to the vineyard the family planted in Elgin in 2003.

Our wine has been enjoyed at the White House, earned critical acclaim and grabbed international attention. Yes, we make great wine. And yes, it's made near the rolling hills of Southeastern Arizona where birds, bobcats and pronghorn antelope call home.

Come down to our Dos Cabezas Tasting Room in Sonoita. It offers a relaxed yet inviting vibe where chats with the owners are as common as the great wine. Dos Cabezas wines are available in many fine Arizona restaurants and retail locations.
    Flying Leap Vineyards
Flying Leap Vineyards is an Arizona Winery based in Santa Cruz County, AZ. This committed team of talented winemakers grows a select portfolio of both red and white wine grapes on two vineyards in southeastern Arizona. FLV produces a diverse portfolio of ultra premium, proprietary wines at its winery located in Elgin, AZ about 45 minutes south of Tucson. FLV operates four tasting rooms and three fine art galleries, which are located at its estate winery in Elgin, in historic downtown Willcox, Old Bisbee and Tucson’s St. Philips Plaza. Flying Leap’s award-winning wines are sold regionally in specialty and major wine retailers.

FLVI produces red, white, rosé and fortified wines of varying degrees of sweetness, acidity, tannin and oak character from an array of carefully-selected grape varieties uniquely suited for southern Arizona’s dry, arid climate and soil chemistry. These include traditional Rhône-style blended wines from red grape varietals such as Grenache/Garnacha, Petit Verdot, Mourvédre, Tannat, Sangiovese, Cabernet Franc, Tempranillo, Cabernet Sauvignon and Graciano. White grapes in FLVI’s portfolio include Viognier, Marsanne, Malvasia-Bianca, Verdelho, Albariño and Piquepoul Blanc.

Santa Cruz Chili & Spice Company
Our Spice Center in Tumacacori is located in the heart of the historic Santa Cruz Valley. The Mission of San Jose de Tumacacori was founded first by the Jesuits in the 1690s. The church, which still stands today, was built in the early 1800s. The Presidio of San Ignacio de Tubac, the oldest of three Spanish military outposts, was established here after an Indian rebellion in 1751. By the late 1800s the valley was dotted with ranches, and mining camps, dominated by dauntless cattlemen and prospectors.

Santa Cruz Chili & Spice Company is both a manufacturer and retailer of fine chili products. At our Spice Center in Tumacacori we sell, along with Santa Cruz Products, a wide variety of gourmet Southwestern foods, cookbooks and a large selection of spices and herbs. We also have a quaint Western Museum documenting the rich history of the area.

This is the home of the Santa Cruz Chili & Spice Company. The business is small. It is family-owned. It is a source of pride. The chili products reflect the unique mixture of Mexican and Western cultures that are so much a part of the Santa Cruz Valley. The flavors are pure and authentic. They represent the valley's rich heritage. You are invited to experience a part of the heritage; to share in its traditions. Bienvenidos.

We are located just north of exit 29 off of Interstate 19 on the East frontage road.

Drop by to see the museum artifacts, sample our unique chili pastes and sauces, find that spice you have been looking for or just soak up the rich history and heritage of this special land.
    Sawmill Run Restaurant
We serve great food in a friendly atmosphere. Indoor dining and a large patio outside. We smoke all our own meat and have a full bar. Come up and enjoy!

The Sawmill Run Restaurant is named in honor of two sawmills that once existed on this very location.

The original sawmill on this site dates back almost a hundred years. Jim Westfall, the first forest ranger on Mount Lemmon, later began to build cabins on the mountain for the Summerhaven Land and Improvement Company. He found an old sawmill once used in mining operations on the north side of the Catalina Mountains, and in the winter of 1915-16 he hauled it up to Summerhaven. With his wife Leeta working along side of him, they milled lumber and built cabins in Soldier’s Camp as well as the Neoli Lodge and La Mariposa Hotel in Summerhaven.

Leeta became the manager of the hotel. A good cook, she provided meals for her guests and wanted to serve alcoholic beverages as well. Since this was during Prohibition, she and Jim installed a secret still above the hotel that turned out moonshine whiskey, beer, and mountain elderberry wine. To protect herself and the still, Leeta kept her 30-30 rifle loaded and might also have a small derringer wrapped in her long hair. She dismantled the still when Prohibition was repealed. Though the first sawmill lasted for several years, it too eventually disappeared.

Tony Zimmerman brought the second sawmill to Summerhaven. A teacher at Safford Junior High in Tucson, he fell in love with Mount Lemmon when he went deer hunting with his school principal in 1937, and often hiked there on weekends.

In Summerhaven he sometimes chatted with R. B. O’Neill on the porch of his two-room general store. O’Neill decided to retire and one day in 1940 offered to sell Zimmerman the Sawmill Tract, named for the original Westfall sawmill. This parcel included the general store and four rental cabins.

In Zimmerman’s opinion the Sawmill Tract, seen first by visitors as they drove down the hill into Summerhaven, was the most valuable business property on the mountain. He promptly bought it. In 1943 he retired from teaching and purchased a used Corely No. 4 Sawmill, also setting it up on the site of this restaurant. He milled lumber to build a new store and eventually the adjoining Mount Lemmon Inn across the road from this restaurant. Both store and inn burned down in 1977. The present day Mount Lemmon Community Center stands on that site.

The Sawmill Run Restaurant and the Community Center remind us of the history of Mount Lemmon in which Tony Zimmerman played an essential role.
