    Beast Brewing Company
The mountains are calling and I must drink beer.
At Beast Brewing, we pride ourselves on running an environmentally conscious facility. Much of our equipment was converted and re-purposed giving it new life. For example, two of our fermentation tanks were formally dairy tanks. We use old fermentation tanks to harvest rainwater & capture waste water, which we run through our heat exchanger when we are brewing to help cool our beer. This allows us to save 3,000 gallons of water per month. We are looking to expand our efforts by incorporating another tank we own which would allow us to save 6,000 gallons per month and to cool the beer entirely without the use of city water. Beast Brewing also donates our spent grain to local farmers.

We are a family and dog friendly facility. The taproom features comfortable seating, flat screen televisions and entertainment. The taproom is available for parties & events. Brewery tours are offered. We have a patio in the front of our facility with views of the San Jose Mountains in Mexico.

James and Amanda Gibson, owners of Beast Brewing Company, were both originally from New England where there is a rich beer culture. Throughout their lives together, they have been home brewing, traveling the country, visiting breweries and hiking. After many years working in restaurants and in corporate America, they decided to pursue their real dream of becoming small business owners of their very own microbrewery. So Amanda and Jim packed up their two small boys and two puggles and drove across the country to the beautiful mountain town of Bisbee, AZ. In fact, the company was named after the couples first son who was given the nickname Rhys the Beast. They completed extensive renovations and opened their taproom doors in early March 2014.

The cuttings brought by the missionaries were a variety of Vitis vinifera, commonly called the "mission grape." This variety is still grown in New Mexico today. Oracle Inn Steak House
Made of adobe blocks, the Oracle Inn was built in 1938 by Boyd Wilson. It was used as an Inn for guests of the Rancho Linda Vista Dude Ranch. The core restaurant evolved over the years and at one time included a small golf course, roping arena and even a baseball diamond. Original parking is still available off of American Ave. A horse tie is located not far from where the original ones, once stood.

In the 1990’s the town of Oracle, whose economy was largely driven from nearby mineral stakes took a severe hit, as many mining companies shut down. Many workers moved away to provide for their families and with far fewer hats to hang the Oracle Inn was shut down.

The Darimont Family didn’t specialize in restaurants, but instantly fell in love with the buildings charm and took on the responsibilities of running the town of Oracle’s favorite food, drink and catering destination. Sitting unused for many years the décor has been largely preserved in it’s dormant state and still includes a great variety of art, mining artifacts, historic photos, Wild West memorabilia and a vast collection of beer steins.

Operations have been passed down from Kari, Justin and Stephanie Darimont to younger brother Nick, who with his team of chefs grill masters, bar tenders and service staff, have established the Oracle Inn as the local watering hole of choice for steak lovers, German food fanatics and fans of all things spicy.

A word from Kari, “We take pride in what we bring to the community and it shows in our in house smoked meats, hand cut steaks, south west style entrees, and family German recipes. Enjoy a variety of Jack Daniels themed cocktails in the adjoining JD’s sports bar and grill, catch a breeze or a sunset on the patio and know that you are part of classic Arizonian and American history.”

    Sawmill Run Restaurant
We serve great food in a friendly atmosphere. Indoor dining and a large patio outside. We smoke all our own meat and have a full bar. Come up and enjoy!

The Sawmill Run Restaurant is named in honor of two sawmills that once existed on this very location.

The original sawmill on this site dates back almost a hundred years. Jim Westfall, the first forest ranger on Mount Lemmon, later began to build cabins on the mountain for the Summerhaven Land and Improvement Company. He found an old sawmill once used in mining operations on the north side of the Catalina Mountains, and in the winter of 1915-16 he hauled it up to Summerhaven. With his wife Leeta working along side of him, they milled lumber and built cabins in Soldier’s Camp as well as the Neoli Lodge and La Mariposa Hotel in Summerhaven.

Leeta became the manager of the hotel. A good cook, she provided meals for her guests and wanted to serve alcoholic beverages as well. Since this was during Prohibition, she and Jim installed a secret still above the hotel that turned out moonshine whiskey, beer, and mountain elderberry wine. To protect herself and the still, Leeta kept her 30-30 rifle loaded and might also have a small derringer wrapped in her long hair. She dismantled the still when Prohibition was repealed. Though the first sawmill lasted for several years, it too eventually disappeared.

Tony Zimmerman brought the second sawmill to Summerhaven. A teacher at Safford Junior High in Tucson, he fell in love with Mount Lemmon when he went deer hunting with his school principal in 1937, and often hiked there on weekends.

In Summerhaven he sometimes chatted with R. B. O’Neill on the porch of his two-room general store. O’Neill decided to retire and one day in 1940 offered to sell Zimmerman the Sawmill Tract, named for the original Westfall sawmill. This parcel included the general store and four rental cabins.

In Zimmerman’s opinion the Sawmill Tract, seen first by visitors as they drove down the hill into Summerhaven, was the most valuable business property on the mountain. He promptly bought it. In 1943 he retired from teaching and purchased a used Corely No. 4 Sawmill, also setting it up on the site of this restaurant. He milled lumber to build a new store and eventually the adjoining Mount Lemmon Inn across the road from this restaurant. Both store and inn burned down in 1977. The present day Mount Lemmon Community Center stands on that site.

The Sawmill Run Restaurant and the Community Center remind us of the history of Mount Lemmon in which Tony Zimmerman played an essential role.
    Sentinel Peak Brewing Company
To provide a constant variety of exceptional, hand-crafted beers in a casual setting where families, friends, and neighbors experience consistent quality and engage in worthwhile conversation.
Sentinel Peak Brewing Company is a 3 BBL (that’s 90 gallons at a time!) nanobrewery offering a rotating selection of craft beers along with a few house favorites. Our inspiration comes from many sources including, but not limited to, travels we’ve had and suggestions from friends.

We are proud members of the Arizona Craft Brewers Guild.

Sentinel Peak Brewing Company opened its doors on January 9, 2014, but the story began long before that. Twenty-two years before to be precise. In the early 90s co-owner Jeremy Hilderbrand was stationed in Germany with the US Army as a Russian linguist. Here he fell in love with the flavors and culture of German beer. However, it wasn’t until many years later when his wife bought him a home brew kit that Jeremy was able to reignite his love for craft beer. Jeremy, who continues to work full-time as a Fire Captain, soon discovered his beers were a huge hit with friends and family. That’s when the embers of opening a brewery really started to kindle. But all too soon Jeremy realized that brewing on a commercial level would be impossible given his firefighter’s budget. So he sought out the help of Engineer/Firefighter Matt Gordon.

    Ten 55 Brewing
Small Batch Brewery catering to Tucson Arizona.
Ten Fifty-Five Brew Works was founded in 2011 by a couple of local Tucsonans, who share a few core beliefs. We'd like to share those with you.

So...we like beer, and we really like good beer. We want to put good beer in reach of those that want to enjoy it, and help nurture the developing brew culture in Tucson. We want to make beer for beer drinkers like us; adventurous beer drinkers that are just as likely to try something new as they are an old favorite. We are committed to the idea of the local nano-brewer; a small batch company using fresh ingredients and open minds to make some great tasting brew. Look for us soon, we'll be looking for you.

    Our four staples:
Sugar Skull Chocolate Milk Stout - Built on a solid milk stout recipe we'll be adding free trade Ecuadorian Cacao nibs and Tahitian vanilla. My grandmother loves this easy drinking stout.
Lazy Duck American Wheat - This crisp wheat beer is refreshingly light for its style, perfect for a hot Tucson summer. The use of torrified wheat makes for a dry, crackery finish.
Leap Pale Ale - This flagship brew will be a craft beer drinker’s favorite. This beer makes good use of flavorful American hop varieties, but is gentle enough to appeal to non-hop-heads.

Ten Fifty-Five Brewing is the brainchild of two friends who love beer and want you to love beer, too. Co-owners John Paul Vyborny and Chris Squires bonded over the idea that beer is more than something you drink—it’s a way of life. Intent on sharing their passion with the general public, the duo aims to provide inspired selections that wow connoisseurs and woo beginners while showing that craft brews are meant to be savored, celebrated and shared with family and friends. The result is a unique experience for both expert and amateur craft drinkers—creative concoctions in an unpretentious environment. Two Suns Citra IIPA - This brew is a hop-head’s dream! The Citra hop variety lends bright, tropical citrusy notes, and is well complemented by the rich, slightly sweet background. This is an all-around big beer, in every way. Our brew staff incorporates a variety of hops and malts, integrating fruits and other ingredients to craft unique beers not found anywhere else

    Tre Rosat Cafe
Tre Rosat Cafe has been highlighted in New Mexico Magazine and is quickly becoming known for it's dynamic and constantly changing cuisine. The chefs have focused on creating a wide range of cuisine while utilizing local ingredients as much as possible.

Owners King Crowder and Lyla Adrienne attended the University of Oregon and remain diehard supporters of their Alma-mater. When they moved to Silver City in 2010, they wanted to pay homage to their school without being completely obvious. That led to using the Google translator to find a suitable translation for 3 Ducks. They liked the Albanian version "Tre Rosat" and the rest, as they say, is history.

Tre Rosat Cafe operated for 1 1/2 years at 101 N. Cooper St. In September of 2011, Tre Rosat Cafe purchased their new building at 304 N. Bullard St. in the heart of downtown Silver City. It took nine months of renovation, but in July 2012, the ducks re-opened in their new location.
