Our business’s commitment to this pioneer Tucson neighborhood has been spearheaded by Kelley Rollings and his family for more than four decades. When Tucson Mayor Bob Walkup presented the ""Heart of Downtown Award"" to the Rollings family recognizing their exceptional contributions, he said ""The Rollings family has played a major role in preserving what's unique about our Downtown."" Thanks to their passion for historic architecture, many irreplaceable structures in Barrio Viejo have been beautifully restored and preserved for future generations to learn from and enjoy.""

In 1971, Kelley Rollings and his wife, Sally, began investing in adobe buildings in Barrio Viejo, many dating from the 1860s and most were threatened by neglect. Today, Arizona Territorial Lands LLC and Bacon Industries, Inc., own more than 30 properties in Barrio Viejo. Each was restored as much as possible to its original appearance, in many cases using salvaged materials, to achieve the highest degree of authenticity. Our properties in Barrio Viejo attract both commercial and residential tenants and our preservation and renewal project has helped breathe new life into this historic location.

The Rollings family continues the commitment to restore this unique neighborhood and its historic structures. Donald Rollings said, ""It is encouraging to know that our community values the preservation of the city's historical architecture and rich cultural heritage. The outcome of present-day efforts to mix preservation and revitalization projects in one of the oldest neighborhoods in Tucson will impact the quality of life in our larger community.

One will discover understated elegance all through the buildings on our properties and we are proud to contribute to our community by making this kind of investment in its heritage.

    Beast Brewing Company
The mountains are calling and I must drink beer.
At Beast Brewing, we pride ourselves on running an environmentally conscious facility. Much of our equipment was converted and re-purposed giving it new life. For example, two of our fermentation tanks were formally dairy tanks. We use old fermentation tanks to harvest rainwater & capture waste water, which we run through our heat exchanger when we are brewing to help cool our beer. This allows us to save 3,000 gallons of water per month. We are looking to expand our efforts by incorporating another tank we own which would allow us to save 6,000 gallons per month and to cool the beer entirely without the use of city water. Beast Brewing also donates our spent grain to local farmers.

We are a family and dog friendly facility. The taproom features comfortable seating, flat screen televisions and entertainment. The taproom is available for parties & events. Brewery tours are offered. We have a patio in the front of our facility with views of the San Jose Mountains in Mexico.

James and Amanda Gibson, owners of Beast Brewing Company, were both originally from New England where there is a rich beer culture. Throughout their lives together, they have been home brewing, traveling the country, visiting breweries and hiking. After many years working in restaurants and in corporate America, they decided to pursue their real dream of becoming small business owners of their very own microbrewery. So Amanda and Jim packed up their two small boys and two puggles and drove across the country to the beautiful mountain town of Bisbee, AZ. In fact, the company was named after the couples first son who was given the nickname Rhys the Beast. They completed extensive renovations and opened their taproom doors in early March 2014.

    Bisbee's Table
Fresh, Local, Original, dining in the heart of Old Bisbee. New American food in an old town far from normal.

Bisbee's Table, a new menu, a new way of looking at the way we prepare food, local, organic, light, fresh, and always changing. Gluten Free hamburgers and a menu just for Gluten Free diets. We love our job!

Bisbee’s Table was established originally as Bisbee Grille in February 2001 under the partnership of the Page family who also operates Santiago’s Mexican, San Ramon Hotel and Bisbee Coffee Co. The location was originally Cafe Maxi’s before 1996. Brothers Rob, Michael, Ed and Bobby accepted the vacant space in 2000 to help provide an additional anchor in the old Phelps-Dodge Mercantile, a decision that has help provide jobs for over 85 people and successfully anchored the building.

We have employed 5 Chefs in the past 15 years, most recently Rebecca McMahon all bringing evolution and expertise to the restaurants. Originally focused on a Tex-Mex style of cooking with white table cloths and a fine-dining flare. A more “new American” casual menu was introduced in 2002 and it has evolved to emphasize big bold flavors and comfort foods in a more relaxed environment.

A name change took effect in 2010 as we re-constructed the look and feel of the restaurant to include a more evolved menu and larger bar scene and to escape the burden of “Grille” in the future of the restaurant, Bisbee’s Table was born of an idea that “all are welcome to our Table”. He started, as usual, with the music a more hip/folk vibe could be felt evolving. Rob was also seen taking a sledge hammer to the microwaves.

In addition to a new 25ft. marquee neon sign, a new bar was constructed by Satori Builders in place of the small service bar that included five elevated bar tables and two giant television screens and 6 beer taps along with new wines and more attention to whiskeys and craft cocktails and the addition of a new herb garden outside the kitchen.

More recently, Tavolo Pizza was added as an expansion concept appurtenant to the kitchen in 900 square feet of the former Visitor’s Center. Pizza was the number one most requested menu item and ignoring it would have been a problem. Guests can better see the evolution of the name change through this new concept and those that follow in the next few years. “Evolution is my idea of sustainability, you are either growing or inviting death, there is no grey area in restaurant management”, says Rob. Many would agree, the restaurants are always busy.
